Korean cooking class with friends. Various banchan (side dishes) and kimchi, chicken feet, BBQ, green onion pancake, rolled Omelette, gimbap, soju, makgeolli. My friends had never had Korean food, and this gave them a good dive into the various dishes and tastes.

Sourdough bakes 2 Feb 2024. Roasted Red Pepper, Calamata Olive, Seeded Wholewheat, White Sourdough, 50% Rye Soft Sandwhich loaf, Honey & Oats Sandwhich loaf. The Rye with slices of cold butter was so, so, so, so good!! Working solo this week was a challenge, but satisfying.

Kimchi day - 12.5kg. A full day's work, but so worth it! Nappa cabbage kimchi. Looking forward to having some crisp fresh kimchi and wait for the rest to ferment and get really tangy over time so we can cook with it. Mature kimchi best for cooking. 1 jar of mature kimchi left to make some kimchi jeon, or kimchi jiggae.

GOCHUJANG homemade. I've been wanting to try this for so long, and the delay was obtaining Mejugaru - fermented soya bean flour. Had some brought in from England. All other ingredients are available locally from @market_kokoro

As I dont have an ONGGI, clay fermentation pot, I allow the paste to get some sunshine through the mesh cloth cover daily. Then I replace the glass lid. I wish I had an onggi - the clay pots we see in Korean movies outside the houses. I would love to check out all the amazing ferments in those pots!

I am sure that homemade is best. Anything factory produced may not be as authentic, in my opinion. And may even have added ingredients which are not necessary. This batch has 6 cups of fine Korean chillie/pepper powder- Gochugaru.

Now all I have to do is wait 3 months or more - some say up to 2 years for a really good Gochujang.

Cape Malay Koesisters - NOT sourdough, this time. Made with fresh yeast, like grandfather used to do. This was a major challenge as the dough doubled in 45 minutes, then as I was shaping, they were proofing too quickly!

The other challenge was to make smooth mashed potato with 10kg of boiled potatoes. The quality.of the koesister depends on the quality of the mashed potato as it adds lightness to the texture. Spices add the flavour and fragrance - nutmeg, cloves, ginger, cinnamon, cardamom and the very important dried and ground Naartjie peel. The same flavours are brought through in the syrup.

1300+ koesisters made in 2 days all by myself! Nearly killed me as I worked one shift from 7am through to the evening the next day. Deadline met - is all I can say...

This was a popular Sunday morning treat in our neighborhood when growing up. The whole neighbourhood smelled of freshly syruped koesisters. We kids ran from house to house delivering hot koesisters to go with that 1st cup of morning coffee. Sadly, not a smell we wake up to these days in our community...

Girl's food & culture day in the city a few week's ago. This time Johannesburg China Town, Cyrildene. Visiting fresh produce stalls and supermarkets selling some familiar and many very unfamiliar Asian ingredients.

We ended up having a meal at Shun De Restaurant. Very generous portions indeed! Hot & sour soup, cucumber & seaweed salad, sizzling beef on a hot plate, stirfry and fried rice. All very delicious...

Sourdough Walnut & Cranberry loaf. Always wanted to try this but never got round to it till this week.

Loved it with just butter. But great for a cheese board. Here served with Cumin Cheese and ginger preserve with some of the syrup. Pickled eggplant and mushrooms with mozzarella cheese and balsamic drizzle and our own slow roasted perserved roma tomatoes.

Should be a great with goats cheese and fig preserve or fresh figs and pomegranate glaze, or cream cheese and sweet chillie jam. Endless possibilities...

Update on "Quick" Gochujang. Vegan and also glutenfree (no barley malt also no fermented soya flour (Mejugaru)).

I felt there was too much air above the chillie paste so moved to 2 smaller jars. As it sits in a warm sunny place during our sunny winter days, I was very worried that the paste would ooze put of the jars as the fermentation action gets more vigorous. So I keep checking the 'rise' and 'split' of the paste a few times a day.

I tasted for the "sour" and decided to add the rice syrup. The paste started to rise and split in the jar - also an indication of fermentation action.

Looking and tasting real good already - but will give it a day or 2 more before refrigerating

Sourdough Roasted Almond & Cracked Black Pepper Biscotti. Serious production happening this week as the colder weather makes people crave something sweet to go along with the endless cups of coffee and tea this time of year.
